Ingredients
  

  • 1 cup protein powder whey or plant-based
  • 1 cup rolled oats
  • 1/2 cup almond butter or any nut butter
  • 1/4 cup honey or maple syrup for vegan option
  • 1 ripe banana mashed
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a bowl, combine the protein powder, rolled oats, and baking soda.
  • Mix Wet Ingredients: In another bowl, mix the almond butter, honey, mashed banana, and vanilla extract until smooth.
  • Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until fully combined. If desired, fold in chocolate chips or other add-ins.
  • Form Cookies: Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake: Bake for 10-12 minutes or until the edges are golden and the cookies are set.
  • Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
