Prepare the Dough:
In a mixing bowl, cream the butter and sugar until light and fluffy.
In a separate bowl, combine the flour, ground Corn Pops or cornmeal, freeze-dried corn powder, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Shape the Cookies:
Roll about 2 tablespoons of dough into balls and place them on the prepared baking sheet, leaving space between each cookie.
Flatten each ball slightly. If desired, sprinkle a little granulated sugar on top for added crunch.
Bake:
Bake for 15-17 minutes, until the edges are golden and the centers remain soft and slightly yellow.
Let the cookies cool on the sheet for 5 minutes, then transfer them to a wire rack to cool completely.
